
Updated Glossary
Kashrus and the world of Kosher food production operate in a unique dimension. In addition to dealing with all conventional issues relating to food production, they must also deal with the requirements that make food Kosher. Just as food technology has its own set of terminology to describe and deal with food production concepts, so does the discipline of Kosher food. In my book Kosher Food Production, I have included a Glossary for the Food Technologist, in which many of the terms used in the text are defined and explained.
I recognize, however, that some terms may have been omitted, and have therefore created this “Updated Glossary” to help with terms or concepts for which readers have requested additional information.
